Tremella fuciformis (Snow fungus, white fungus or silver tree-ear fungus) is an edible jelly fungus, used in Chinese cuisine. It is found growing in subtropical regions of the world. This off-white, translucent fungus grows in frilly masses on various species of hardwood tree.

Tremella fuciformis is normally sold in dried form, and must be soaked before use. It is traditionally used in sweet dishes or desserts, and is enjoyed for its jelly-like texture, as well as the medicinal benefits found in the fungus.
