Pimento or cherry pepper is a variety of species Capsicum annuum. It is a mild, large, red, heart shaped chili pepper, measuring 3-4 inches long and 2-3 inches wide. Some varieties of pimento are hot, including the Floral Gem and Santa Fe Grande varieties. Pimento is the Spanish word used in English, and Portuguese word for bell pepper.

Pimento pepper can be used fresh, pickled and jarred, and is the familiar red stuffing found in pickled Spanish green olives. It is also commonly used for making pimento cheese and pimento loaf.
